Adrian Colman, Operations Director at Hotel La Tour, Birmingham, takes time out from putting the finishing touches in place at Aalto Restaurant to talk about his vision.
Without doubt, it’s a great opportunity to be given the chance to create a new brand from the ground up. Our vision, in all that the do at the hotel, has been to take a different approach in all that we do and to remain singularly focused on how we create the best possible experience for our guests.
We’ve had the privilege of working closely with Michelin-starred Chef Marcus Wareing on the concept for Aalto Restaurant. Hotel La Tour Head Chef Alex Penhaligon has spent a great deal of time with Marcus and his team developing dishes for our restaurant menu.
The location and styling of Aalto Restaurant are going to create a great wow factor. We’re in a prime city centre location with great views of the cityscape. The building design has allowed us to use granite and glass in a very modern way, softened with other natural things like timber and bronze.
Diners will arrive at our restaurant through the hotel’s double height lobby and up a sweeping glass staircase onto a mezzanine floor. It’s a dramatic setting and it’s crucial that our menu is impressive enough to stand up to this!
Final calls on what the menu will look like are still being made – I was fortunate enough to be on the judging panel for puddings recently. My favourite? Tricky question that, but would probably come down to either the gingerbread and apple crumble with custard and Calvados cream or sherry trifle with a Pedro Ximenez tipple, blackberry jam and custard.
