Chef Dan Pearce had the honour of cooking for one of his idols last night – Birmingham’s very own Glynn Purnell.
With a day off from his much-lauded Purnell’s Restaurant, Michelin-starred Chef Glynn chose to spend the evening with dinner at the Chef’s Table at Aalto Restaurant.
Dan presented a special taster menu including chilled cucumber soup with smoked salmon and crème fraiche, Gressingham duck croquettes and radish salad, Cornish monkfish with a curried mussel chowder, buttermilk panna cotta with blackberries and egg custard tart with nutmeg and berry compote.
Among the party at our Chef’s Table was Pete Casson from Purnell’s Bistro and the evening kicked off with Alvar Bar’s signature cocktail, the 1889 – a frothy mix of Bombay Sapphire, apple, elderflower, ginger and lime charged with co2, and named after the year Birmingham was granted city status.
Glynn, who was christened the Yummy Brummie by the BBC’s Olive Magazine, is as busy as ever – in the last few days he’s been filming a BBC Christmas food special with Michel Roux Jr and Mary Berry and taking part in photoshoots for his forthcoming – and as yet unnamed – book due out in May which promises to be a great read, no doubt reflecting his great passions for food, family and foodball.
Dan said: “Glynn is a great, great chef who I admire and a really nice guy. It was a great evening.”

Pastry Chef Rachel, creator of our renowed afternoon teas, presented a pre-dessert of buttermilk panna cotta with blackberries and an egg custard tart with nutmeg and berry compote which, along with his main course of Cornish monkfish, Glynn singled out for praise.
